Gourmet Grilled Cheese at Home (inspired by the Say Cheese Food Truck)

Yesterday I attended the Food Truck Festival at the Wachusett Mountain Ski Resort in Princeton, MA. There were about 12 Food Trucks there and each had a line that seemed like it would take hours. I knew I had to have a grilled cheese from the Say Cheese Food Truck (click their logo to be brought to their website).
I ended up having the Wedge - cheddar, bleu cheese crumbles, bacon, and tomato.
I attended with my parents, who also got sandwiches there. They got:
Figgin' Goat: goat cheese, fig paste, and arugala
Cheddar monster: cheddar, muenster, and tomato
These sandwiches were all served on ciabatta bread slices.
They should be easy to replicate at home, which I will certainly be trying soon.
**** Tip: one tip for the perfect grilled cheese is one I have heard of rather recently. It was suggested to use mayo instead of butter on the bread for grilling. The mayo is supposed to spread easier and have a higher smoke point, providing for the perfect grilled cheese.
