Superfood Packed Salad

So this salad could not be easier to make, I mean it's a salad so. But the best thing about it isn't its quickness to make, or it's qualities as a super healthy meal... it's the taste. This thing tasted fantastic - all the right flavor combos.

So what's in it:

  • Base - spinach

  • Mandarin oranges (no sugar added from a can, but fresh are for sure better)

  • Blueberries

  • Cashews

  • Chopped shallots

  • Bleu cheese

  • Dressing ----> balsamic vinegar (I use fiore artisan because that stuff is to die for, this happened to be fig aged flavor), olive oil, some salt and pepper, and Dijon mustard. These ratios are going to differ based on your personal flavor preferences. But I did mine pretty much 1:1:1, besides the salt and pepper duh. http://www.fioreoliveoils.com/collections/all-products
